Healthy Couscous Salad

Couscous is a hot favorite of North African and Middle eastern countries, Its very much liked by French and is fast catching up with rest of the world. It’s low on fats as its boiled & cooked and high in proteins so very healthy recipe. It looks gorgeous with farm fresh veggies mix with it.

If you try it once I am sure it’s a matter of time then that you will get hooked on to it and make it your regular meal recipe. After all it is extermely healthy & a low calorie food!! The dish is made with couscous mixed well with fresh vegetables and olive oil & lemon juice.

Step-by-Step Easy & Quick Recipe –

Ingredients:

Couscous – 1 cup

Water -1 ½ cups

Tomatoes – ½ cup de seeded & finely chopped

Cucumber – ½ cup finely chopped

Fresh green coriander – ½ cup finely chopped

Bell peppers – red, green & yellow – ½ cup together diced small size

Spring onions – ¼ cup fine chopped

red onions – 1/4 cup (optional)

Chickpeas – 1/4 cup (optional)

Broccoli florets – ½ cup

Lemon juice – 2 tablespoons

Salt per taste

Ground black pepper

Extra virgin olive oil – 2 tablespoon
Instructions:

  • Heat water in a saucepan & slowly add couscous. Take off from heat and let it sit for 10 mins. Then fluff it with a fork.
  • In mixing bowls first put all couscous and then add the balance ingredients and gently toss to mix well.

Note : Couscous can be served with crispy whole wheat bread or grilled or toasted Pita wedges or even with Lavash bread. This recipe will make you feel light after a good meal too. Enjoy, Bon Apatite!!!
