You will love to have it as it can be called a planned super diet meal too. In this salad dish different chopped & cut veggies are layered one on top of another to give it an extraordinary beautiful look & to serve a healthy meal on top of that.

Ingredients:

For Salad –

Lettuce Iceberg – (chiffonade) – 1 cup

Dark Red Kidney Beans pre boiled with salt water – ½ cup

Peas pre boiled in salt water – 1 cup

Purple cabbage – ½ cup

Corn pre boiled in salt water – 1 cup

Spring onions – ½ cup

Carrots – 1 cup sliced

Cucumber – 1 cup diced

Bell pepper – red, orange, yellow – 1 cup

Avocado – diced – ½ cup

Broccoli – pre boiled in salt water, chopped coarsely – ½ cup

Tomato cherry – 6 pcs (halved)

Fresh cilantro – ½ cup finely chopped

Boiled eggs – 2 sliced (optional)

For Dressing-

Mayonnaise – 1 cup

Sour cream – 1 cup

Lemon – 1 teaspoon

Sugar – 1 teaspoon

Salt per taste

Ground black pepper

For Topping-

Cheddar cheese – grated – ¼ cup

Bacon – 2 rashes crispy cooked and crumbled (optional)

Instructions:

  • In a deep salad bowl, layer the veggies one by one as per the color combination you like. Add eggs if you like.
  • Mix mayonnaise, sour cream, lemon juice & sugar in a separate bowl first and then on top of the veggies spread a layer of this cream mix. You can use Thousand Island dressing too if you prefer that.
  • On top you can sprinkle grated cheddar cheese (optional) & crumbled bacon (optional).
