Sweet Coconut Sandwiches

As a mum of two kids, I too have the dilemma of what to cook for the evening snack when they are back from school. Most of the kids are fussy eaters and to make them eat something healthy is quite a huge task for every mother & to satisfy them daily is a difficult task at hand. Its usually a big NO to healthy snacks. They normally prefer junk food to home made regular snacks.

When I was a kid my mum used to this snack for me, which I loved so I robbed this recipe from her cookbook to share with all the beautiful mums out there. My kids simply love it and can have any time. I am sure that you all will also enjoy it along with your kids so try this Sweet Coconut sandwich, very quick and easy to make.

Coconut has many health benefits but for kids it can also helpful to avoid obesity and is a fast energy booster. This recipe is made with grated coconut, sugar, butter & bread slices toasted in a sandwich maker.

Step by Step Easy & Quick Recipe –

Ingredients:

Sandwich bread or whole wheat brown bread

Sugar – 5-6 tablespoon

Butter – 1 tablspoon for coating bread inside

Grated coconut – 1 big or 2 small

Cardamom powder (optional) 1 pinch

Vanilla extract (optional) 1 spoon

Almond flakes (optional) 1 tablespoon

Instructions:

  • Grate coconut and mix with sugar. Keep aside.
  • Heat the sandwich maker.
  • Take bread slice and put a layer of butter and on top coconut mix, cover with another slice.
  • Put the sandwich using edible oil coating on both sides slightly in the sandwich maker and close it.
  • It takes around 2-4 mins to be toasted in it. Serve hot or at room temperature.

Note: you can add vanilla extract, cardamom powder & almond flakes if you like. To all mums who like creative kids cooking, Kids will love it and crave for more & more. Bon Apatite!!
