Balela is a Mediterranean Chickpeas & Black bean salad mixed with herbs and vegetables. With lemon and olive oil dressing.

Chickpeas – 2 cups (soaked, boiled & drained)
Black Bean – 1 cup (canned & drained)
Spring onions – ½ cup chopped
Cherry Tomato – ½ cup halved
Cucumber – ½ cup chopped
Fresh green coriander or cilantro – ½ cup finely chopped
Fresh mint – 2 tablespoon finely chopped
Garlic cloves – 2 minced
Green chili – 1 chopped
Salt per taste
Ground black pepper
Apple cider vinegar – 1 tablespoon
Lemon juice – 2 tablespoon
Extra virgin olive oil – 1 tablespoon
- Blend together the lemon juice, apple cider vinegar, olive oil and prepare dressing, keep aside.
- In a salad bowl mix the chickpeas, black beans, garlic, spring onions, cherry tomatoes, cucumber, fresh green coriander, fresh mint, salt and ground pepper and the dressing together.
Note: Serve and enjoy a bowl of healthy Balela Salad.
