Make-MY-Day Egg & Veggie Scramble

Perfect week end brunch recipe! When you are up late & want to have a lazy day, you are still thinking what to cook and don’t want to spend too much time in kitchen, then this is a nice recipe which will be wholly satisfying, healthy and yummy too with a perfect blend of fresh vegetables and scrambled eggs & cheese.

Eggs are always a healthy meal in which ever form you may like to have them, protien rich, so get started, make it quickly, dig in and make your hungry belly happy and above all Pat your back for doing a great job.

Step-by-Step Easy & Quick Recipe –

Ingredients:

Zucchini – ½ sliced thinly

Broccoli – ½ cup florets (boil separately water with salt)

Spring onion bulb – sliced finely including the green leaves portion slice diagonally

Fresh basil – 1 teaspoon sliced finely

Dried oregano – ¼ teaspoon

Dried thyme – ¼ teaspoon

Salt per taste

Ground black pepper

Fresh cream – 2 teaspoon

Ricotta or Feta cheese – 2 tablespoon

Sausage – 2 pan fried and cut diagonally in 1inch pieces

Extra virgin olive oil

Instructions:

  • Break and beat eggs. Heat oil in the pan and put the beaten eggs in it, keep the heat on low. Keep turning slowly with spatula and when they start setting then add cheese, salt & ground pepper.
  • Side by side in another pan pour oil and add sausages and fry, once done take out and cut slices either diagonally or round as per your choice. Keep aside.
  • Now tos  zucchini in this pan and sauté for 4-5 mins and add boiled broccoli florets and chopped green onions, salt, dried herbs & ground pepper.

Note: Garnish with sliced basil, you can either eat scrambled eggs with veggies & sausages as is or with any choice of bread. Enjoy your relaxing day J
