Beets with Paneer Feta & Figs

Beets are one of the best vegetables; it helps control heart ailments & is also good for stroke patients. On top of it, it’s considered a good natural cure for blood pressure control.

It can be had in the form of salad, juice or a main or side dish meal. Here is a salad recipe, which is per se healthy & damn delicious & yum to look at too!

Ingredients:

Beet – 2 cups or 300 grams (peeled & finely chopped)

Cottage cheese (Paneer) – 1 cup or 225 grams (small cubes or crumbled per choice)

Figs – 3 (sliced in half)

Extra virgin olive oil – 2 tablespoons

Lemon juice – 1 tablespoon

Fresh green coriander – 2 tablespoon choppedWater – 3 cups

Salt per taste

Ground black pepper

Red-hot paprika – ¼ teaspoon

Honey or maple syrup -1 tablespoon

Apple cider vinegar – 1 tablepsoon

Sour cream – 4 tablespoons

Chives – 1 teaspoon

Almonds & Pistachio & pine nuts – roasted – 3 tablespoons (sliced)

Pecan nuts or walnuts – toasted 1 tablespoon (sliced)

Feta cheese – 1/4 cup (crumbled) – optional

Salad fresh green – 1 cup (of your choice)

Instructions:

  • Heat water and lemon juice & salt in a sauce pan and add beets, Boil till tender. The water should be enough to make them immersed and if it dries, then keep adding little by little till beets are cooked. Chop them now coarsely & saute them till they turn golden slightly.
  • Side by side in a separate pan-fry cottage cheese (paneer) slightly for 2 minutes, fry with salt and paprika so they are coated well. Do not over fry to let paneer stay soft. After paneer is done, saute figs with salt & pepper till they are tender and ready.
  • Now toss the boiled & sateed beets in the pan with figs, cottage cheese, fresh coriander and mix well. Add honey or maple syrup along with apple cider vinegar.

Note: Serve on the plate with first the salad greens, then on top beets & paneerwith a blob of sour cream and garnish the sour cream with chives and almond, pistachio, walnuts or pecan nuts. Enjoy as yummiest salad or as a perfect side dish with your choice of bread.
