Mast Malai Kadhai Paneer

Paneer dishes being very sought after in India make a great part of any meal whether entertaining or simple enjoying at home. paneer is a Indian curd cheese made from curdling milk with lemon juice or vinegar. Very soft in texture and very tasty & healthy ingredient of Indian cuisine.

This recipe include fresh cottage cheese (paneer) cooked with julienned green bell peppers mixed with onion, ginger garlic masala & fresh cream. Totally rich like mughali style recipes.

Ingredients:

Paneer – 250 grams (big cubes)

Green bell pepper (capsicum) – 2 (thinly sliced length wise and then cut in half)

Onion – 2 medium – finely chopped

Garlic cloves – 3 minced

Ginger – 1 inch grated

Green chili – 1 – finely chopped

Tomato – 2 large – pureed

Extra Virgin olive oil – 3 tablespoons

Cumin seeds – ¼ teaspoon

Salt – per taste

Red chili powder – ¼ teaspoon

Turmeric powder – ¼ teaspoon

Coriander powder – ½ teaspoon

Garam masala – ¼ teaspoon

Kashmiri mirch powder – ¼ teaspoon

Fresh Cream – 4 tablespoon

Fresh green coriander – 2 tablespoon chopped

Instructions:

  • Heat olive oil in a pan and add cumin seeds, when they start to crackle and get aromatic, add onion, ginger, green chili and garlic. Sauté for 4-5 minutes till onions start to brown.
  • Now add the tomato puree and all ground spices, mix well.
  • Once the oil start to separate from the mix, then add green bell pepper and cover and cook on medium heat for 8-10 minutes till the bell pepper is cooked. If it get’s very dry then sprinkle little water to avoid burning.
  • Add cubed paneer to the bell pepper mix and sauté for another 2-3 minutes till they all blend well with each other. Add fresh cream and mix well

Note: Now transfer to a serving bowl and garnish with fresh coriander. Can be served with hot chapatti, parantha or naan. Enjoy a great Mughlai dish right on your dining table.
