Stir Fry Zucchini

Zucchini is fast becoming well known and a favourite in Indian cuisine as well although is originally from Europe & America. This green veggie is quite smilar in looks with cucumber or Indian tori or turai in looks, this veggie goes by the another name ‘Courgette”. This vegetable has many health benefits, the best one being that it is very low in calories, so an ideal food for any dieter or health conscious person. Do you know 100 grams of zucchini carry’s only 17 calories, Wow, isn’t is wonderful!

Here is a recipe which is very quickly made if are in a rush, it’s almost like an instant 2 minute recipe and on top of it the cooking process is too too simple. I am so glad that it has made a presence in an Indian kitchen too now.

In this dish zucchini is julienned and then sauteed in extra virgin oilve oil or sesame oil and spiced up with red chili flakes & salt with toasted sesame. It’s yum!

Step by Step Easy & Quick Recipe –

Ingredients:

Zucchini – 2

Extra virgin olive oil or sesame oil – 2 tablespoon

Salt per taste

White sesame seeds – 1 tablespoon (toasted)

Red chili flakes – 1/4 teaspoon

Instructions:

  • Slice zucchini and then julienne these slices.

  • Place a pan on the medium heat and add olive oil.
  • Now add zucchini and saute. Add salt after 2 minutes when portions of julienne zucchini start turning brown.
  • When zucchini is done then lastly add red chili flakes just before taking the pan off heat.

Note: Season with toasted white sesame seeds and enjoy with a bowl of white or brown or black rice. This can be served with your choice of bread too. Yum!!
