Cucumber is a low calorie, hydrating cool veggie. It is best known for its use in salads. If you like cucumbers in your salad, then you are in for a real treat. This side dish is called Oi-Muchim.
This dish is a Korean recipe. In Korean cuisine the side dish or Banchaan is a part of the actual meal essentially. They love to have side dishes with their rice or soup. I have seen many recipes but the one that I followed was from Maangchi. I hope you will try and savor this side dish too.
In this recipe cucumber is mixed with onions & soy sauce & sesame. The taste is super yum!

English Cucumber – 1 Large
Onion – ¼ cup (thinly sliced)
Spring onion – 1 (thinly sliced)
Garlic cloves – 2 (minced)
Sesame seeds – 2 teaspoon (toasted)
Sesame oil – 2 teaspoon
Soy sauce – 2 tablespoon
Red chili flakes – 2 teaspoon
- First wash and clean cucumber. Slice it now length wise into half and then each half cut diagonally into small slices. If you want then you can just slice the whole cucumber without cutting length wise first.
- Take a large mixing bowl, place all the ingredients together with cucumber and mix well so that cucumbers are coated well.
Note: Serve as a side dish with rice or noodles or simply with bread. Some people like to add a teaspoon of sugar too. Its a super quick recipe. You can even some times serve it as salad. Enjoy.
