Swiss Doctor Dr. Bircher-Benner introduced this muesli in 1990’s when he wanted to make diet rich in fruits & vegetables as a part of his therapy. Bircher muesli is essentially made with rolled oats, milk, yoghurt, grated apple, lemon juice, fresh fruits, honey & nuts soaked overnight.

Ingredients:
Rolled Oats (normal instant packed oats) – 100 grams
Milk – 1 ¼ cup
Yoghurt – ½ cup
Vanilla extract – ¾ teaspoon
Apple – 1 Large (grated coarsely)
Lemon juice – ¼ teaspoon
Honey or maple syrup – 1 tablespoon or add per taste
Chia seeds – 2 tablespoons
Almonds – 8-10 (sliced or flakes – toasted)
Pistachio – 10 (sliced & toasted)
Walnuts – 8-10
Flax seeds – ¼ teaspoon
Pomegranate seeds – 2 tablespoon
Banana – 1 sliced – optional
Pear – 2 (diced) – optional
Strawberry fresh or dried– 4-5 (halved) – optional
Blue berry fresh or dried– 8-10 – optional
Raspberry fresh or dried – Black & Red – 4 optional
Cinnamon – 1 pinch (optional)
Instructions:
- Take a big bowl and mix together oats, milk, yoghurt, lemon juice, chia seeds, cinnamon, honey and vanilla extract. Refrigerate it over night.
- Chop the pear and slice bananas.
- Transfer oats in your breakfast bowl and later the fresh fruits on top and dress with toasted nuts.
Note: Enjoy a delicious bowl of healthy Bircher Muesli. The Prep time indicated does not include the soaking overnight time.
