Lettuce Romaine or Iceberg – 2 cups (roughly chopped)
Tomato – 1 large (chopped)
Avocado – 1 (pulp taken out & diced)
Cucumber – 1 (diced)
Corn kernels – 1 cup
Bell pepper – ½ cup (mixed green, yellow, red & orange) diced small size
Garlic clove – 1 (minced)
Fresh green coriander – ¼ cup
Mayonnaise – ¼ cup
Sour cream – ¼ cup
Milk – ¼ cup
Lemon juice – ¼ teaspoon
Salt per taste
Ground black pepper
Pumpkin seeds – 1 tablespoon (toasted)
Cottage cheese (paneer) or feta cheese – 2 tablespoon (crumbled)
- Prepare dressing by adding mayonnaise, green coriander, sour cream, lemon juice, salt, ground pepper & milk.
- In a mixing bowl mix all diced vegetables, corn & lettuce.
- Place on a serving plate and pour the dressing on top and add pumpkin seeds & crumbled cheese.
