Corn-Tomato-Lettuce Salad with Ranch Dressing

Generally in summer season every one is low on appetite and Salads are a welcome meal – light & delicious always.

Here is a great salad recipe with lettuce, tomato, corn, cucumber, avocado & bell peppers dressed with cilantro ranch dressing. Try out!

Ingredients:

Lettuce Romaine or Iceberg – 2 cups (roughly chopped)

Tomato – 1 large (chopped)

Avocado – 1 (pulp taken out & diced)

Cucumber – 1 (diced)

Corn kernels – 1 cup

Bell pepper – ½ cup (mixed green, yellow, red & orange) diced small size

Garlic clove – 1 (minced)

Fresh green coriander – ¼ cup

Mayonnaise – ¼ cup

Sour cream – ¼ cup

Milk – ¼ cup

Lemon juice – ¼ teaspoon

Salt per taste

Ground black pepper

Pumpkin seeds – 1 tablespoon (toasted)

Cottage cheese (paneer) or feta cheese – 2 tablespoon (crumbled)

Instructions:

  • Prepare dressing by adding mayonnaise, green coriander, sour cream, lemon juice, salt, ground pepper & milk.
  • In a mixing bowl mix all diced vegetables, corn & lettuce.
  • Place on a serving plate and pour the dressing on top and add pumpkin seeds & crumbled cheese.
