Tomato-Avocado-Pomegranate Salad

Nice & tasty salads are always a very satisfying meal. Salads make great appetizers, side dish, even main course and desserts. When you are on a rigid diet, then what more can you ask than having a bowl of salad.

This salad is made with fresh tomato, cucumber, avocado, onion, pomegranate seeds & fresh green coriander, looks & tastes yum!

Step-by-Step Easy & Quick Recipe –

Ingredients:

Tomato – 1 Large (diced-bite size or thinly sliced)

English cucumber – 1 (diced- bite size)

baby spinach – 1 cup (wahed & cleaned)

Avocado – 1 (Pulp taken out and diced- bite size)

Pomegranate seeds – 4 tablespoons

Onion – 1 tablespoon (sliced or chopped)

Garlic cloves – 1 small (minced)

Fresh green coriander – ¼ cup

Salt per taste

Ground black pepper

Extra virgin olive oil – 2 tablespoon

Red wine vinegar or normal white vinegar – 1 teaspoon

Dried oregano – 1 teaspoon

Almonds – 8-10 (sliced & toasted)

Dried cranberry – 10 (chopped)

Instructions:

  • In a mixing bowl, add cucumber, tomato, avocado, pomegranate seeds, onions, garlic, dried oregano, green coriander and cranberry & now mix gently.
  • Now on a serving platter arrange spinach and then place all the other ingredients from mixing bowl.
  • Now mix olive oil & red wine vinegar and pour over the salad (you can prepare this prior to mixing veggies in mixing bowl).
  • Season with salt & ground black pepper & toasted almonds.
  • Serve immediately.

Note: Enjoy your delicious salad. Incase you don’t have vinegar on hand then lemon juice can be used too.
