Sometimes we just want to cook & try something different from every day recipes; well! Here is one recipe, which is quick & delicious.
This is cooked with paneer (cottage cheese), zucchini & cream cheese served on top of toasted bread. Am sure even kids will love it too, worth a try!

Bread slices – 4 (whole wheat brown bread or any bread of your choice)
Zucchini – 2 (slit lengthwise, again halved & then thinly sliced)
Paneer (cottage cheese) – 1/4 cup (crumbled & slightly mashed)
Cream cheese – 3 tablespoon
Mayonnaise – 1 tablespoon
Fresh cream – 1 tablespoon
Lemon juice – ½ teaspoon
Salt per taste
Growing black pepper
Red chili flakes – (optional)
Chives – 1 teaspoon (optional)
Fresh green coriander – 1 teaspoon (finely chopped)
Extra virgin olive oil – 1 ½ tablespoon
- Heat olive oil in a grill pan or skillet and add sliced zucchini and grill. Once it’s ready add lemon juice, salt & chili flakes (optional).
- Now sauté crumbled or mashed paneer in ½ tablespoon of olive oil for 3-4 minutes, take off heat. Cool it & once it comes to normal temperature add cream cheese, fresh cream, mayonnaise, chopped green chives, salt & ground pepper & green coriander and mix well.
- Toast the bread slices. Place them on serving plate. First layer them with paneer-cream cheese mix and then top it with grilled lemon zucchini layer. Season with ground black pepper to taste.
Note: Serve it as a breakfast, lunch or dinner meal. Bon Apatite!
