Bhindi also called as Okra, Bamya or ladies finger is one of the main veggies cooked in every home. It is cooked in many different ways.

Bhindi (Okra) – 500 grams
Onion – medium – 2 (finely chopped)
Green chili – 1
Tomato – medium 2 (grated – don’t include the skin)
Garlic – 4 (finely chopped)
Curry leaves – 5-6 leaves
Cumin seeds – ½ teaspoon
Mustard seeds – ½ teaspoon
Salt per taste
Turmeric powder – 1/8 teaspoon
Coriander powder – 1 teaspoon
Red chili powder – ½ teaspoon
Extra virgin olive oil or any vegetable oil – 2 tablespoon
- Wash and pat dry the okra, without any moisture remaining in them. Now chop & trims the ends of okra (bhindi) and cut ½ inch pieces, the heat one-tablespoon oil in a pan, add okra and fry okra for about 20-25 minutes. It should get brown but not burn.
- Heat oil in a wok or large pan and add curry leaves, cumin seeds & mustard seeds. When they splitter and gets aromatic, add onion & garlic. Fry for 5-6 minutes till onions start getting golden brown.
- Add grated tomato and salt, turmeric, coriander & chili powders. Fry 10-12 minutes without cover till oil separates from masala and okra is cooked.
- When the okra is cooked and soft enough to be eaten, now lastly add green coriander. Mix well and serve.
Note: Bhindi sabzi can be served with dal, chapatti, rice. Enjoy!
