Step-by-Step Easy & Quick Recipe –

Prep Time           Cook Time                Total Time                    Yields

15 mins                    10 mins                     25 mins                     3-4 Serving

Red Lentils – 1 cup

Onion – 1 (chopped)

Garlic – 2 (chopped)

Carrot – 1 (chopped)

Potato – 1 (chopped)

Green coriander – 2 tablespoons (chopped)

Lemon juice – 1 teaspoon

Mint – 2-3 leaves chopped – optional

Water or vegetable broth – 6-7 cups for boiling lentils

Salt per taste

Ground black pepper – ¼ teaspoon or per taste

Ground cumin – ½ teaspoon

Cayenne pepper – 1 pinch

Parsley – 1/4 teaspoon (optional)

  • In a large saucepan or pot add all ingredients together except mint & black pepper and let it come to a boiling point. Then lower the heat and let it simmer for another 25-30 minutes till the lentils & vegetables are soft & tender.
  • Now blend it in blender. While blending the hot soup extra care needs to be taken by holding the cover tightly and holding the blender with a kitchen towel as it will be hot and due to heat & steam the lid normally tends to open and the hot soup can splash around causing harm.
  • Garnish with min & coriander, sprinkle black pepper.

Note: This delicious hot soup can be enjoyed with a crispy bread of your choice. Bon Apatite!

Happy Cooking!!
