Are you fond of soups? Well here is a very quick, nutritious & easy recipe full of nice flavors, which can be made at home and enjoyed with family any time. Especially a hot bowl of soup in cold weather, it is a real treat.
This soup is cooked with red lentils along with some vegetables and then blended together.

Red Lentils – 1 cup
Onion – 1 (chopped)
Garlic – 2 (chopped)
Carrot – 1 (chopped)
Potato – 1 (chopped)
Green coriander – 2 tablespoons (chopped)
Lemon juice – 1 teaspoon
Mint – 2-3 leaves chopped – optional
Water or vegetable broth – 6-7 cups for boiling lentils
Salt per taste
Ground black pepper – ¼ teaspoon or per taste
Ground cumin – ½ teaspoon
Cayenne pepper – 1 pinch
Parsley – 1/4 teaspoon (optional)
- In a large saucepan or pot add all ingredients together except mint & black pepper and let it come to a boiling point. Then lower the heat and let it simmer for another 25-30 minutes till the lentils & vegetables are soft & tender.
- Now blend it in blender. While blending the hot soup extra care needs to be taken by holding the cover tightly and holding the blender with a kitchen towel as it will be hot and due to heat & steam the lid normally tends to open and the hot soup can splash around causing harm.
- Garnish with min & coriander, sprinkle black pepper.
