Rabadi Malai Shahi Tukda


Shahi Tukda and Rabadi Malai both are famous sweet dish from North India. It is known for its rich nature and delicious taste. Take it as a real treat for the taste buds. It is made with crisp toasted bread slices in sweet saffron flavored cream sauce, garnished with toasted nuts.

This dish is made with bread, milk, sugar, condensed milk & nuts with a saffron flavor. In this recipe you get a taste of rabadi with saffron flavor.

Bread slices – 4-5 (cut into halves or 4 pieces per slice or ) – white or brown bread can be used per choice.

Milk – 3 cups

Condensed milk – ½ cup

Khoya – 2 tablespoons (crumbled)

Sugar –1 tablespoons or per taste

Saffron – (soaked in a tablespoon of milk)

Cardamom powder – ¼ teaspoon

Almonds – 1 teaspoon (sliced or flakes – toasted)

Raisins – 2 teaspoon

Cashew nuts – 1 teaspoon (sliced & toasted)

Pistachio – 1 teaspoon (sliced & toasted)

Oil for shallow frying


  • Boil milk, condensed milk in a large saucepan, when it comes to a boiling point add sugar (the condensed milk is already sweet so check the taste before adding sugar), saffron, cardamom powder, raisins and khoya. Simmer on low heat for 12-15 minutes till the milk mix gets thicker. The milk quantity will reduce a lot after thickening. This is also called rabadi in North India.
  • In a separate pan shallow fry and toast sliced almonds, pistachio & cashew nuts. Keep aside.
  • Now shallow fry the bread pieces in a pan. Take out the bread and put on a plate with kitchen towel so that the excess oil can be absorbed.
  • Now place the bread pieces on the serving plate and pour the milk mix rabadi over it and around the bread. Garnish with toasted almonds, cashew nuts & pistachios.
