Thoran or thokaran is a dish from Kerala and is normally a part of their famous festival Onam. It is basically different veggies cooked together o you can plainly say it’s a mixed vegetable dish. it is highly nutricious and delicious too.
Here this recipe has a lot of veggies like beans, carrot, bitter gourd, cabbage etc. cooked in coconut oil and dressed with grated coconut as well.
Step-by-Step Easy & Quick Recipe –

Mix veggies – 3 cups (carrots, beans, bitter gourd, green peas, cabbage, snake gourd) – all veggies peeled if needed & very finely chopped except peas
Onion – medium 1 (finely chopped)
Green chili – 1 (finely chopped)
Coconut – ¼ cup (grated)
Curry leaves – 5-6
Salt per taste
Mustard seeds – ½ teaspoon
Asafetida – 1 pinch
Whole red chili – 1 (halved)
Turmeric powder – 1 pinch
Chili powder – ¼ teaspoon
Urad dal (black split lentils skinless) – ½ teaspoon
Coconut oil – 2 tablespoon
- Heat oil in a large pan and add mustard seeds, urad dal, curry leaves, whole red chili & asafetida. When the mustard seeds splutter, add onion and green chili and fry for approx. 3-4 minutes till onions start becoming golden brown.
- Now add all chopped veggies with salt, turmeric, chili powder, cover & cook on low heat for 8-10 minutes. Generally this dish is dry and can be cooked mostly in the steam after covering the pan but if it gets too dry, sprinkle little water from time to time till veggies are cooked and are tender.
- Lastly add the grated coconut and take off heat, mix well & serve.
Note: Serve hot with chapatti or rice, Yummy!
