Micro-greens really tempt me; they look beautiful on your plate and are healthy as they are thought to be full of vitamins & minerals.
I want to share a recipe which I liked very much, a great looking healthy micro-greens salad. Its made with micro-greens, avocado, orange, carrot & walnuts in a lemon garlic vinaigrette. Yummy!

Ingredients:
For Salad:
Micro-greens – 1 cup
Avocado – ½ (peeled & diced)
Blood orange or normal orange – 1 (peeled, cut into small pieces and seeds taken out)
Carrot – ½ cup (shredded)
Walnuts – ¼ cup (chopped & toasted)
For Vinaigrette:
Garlic clove – 1 (finely chopped)
Lemon juice – 1 tablespoon
Olive oil – 1 tablespoon
Salt per taste
Ground black pepper per taste
Instructions:
- Wash and clean micro-greens very carefully as they are very delicate, wash them with light hand to take off any soil sticking to them, then place them in colander to dry out.
- Now place them in a serving bowl and add orange, grated carrots, avocado & walnuts.
- Mix the vinaigrette in a small jar and pour over the salad.
Note: A healthy, nutritious & beautiful looking salad is ready, serve with your choice of bread or as is. Enjoy!
