Russian blini are world famous crepes mostly made with buckwheat flour. They are extremely delicious and are a great option when you are in a mood to have a grand or royal breakfast. The name might suggest that it is a difficult recipe but actually it is a very simple & easily doable recipe.
This great recipe is made with buckwheat or all-purpose flour, eggs, salt & sugar and shallow fried. The delicious Blini goes very well with sour cream, jams or even served with sweet condensed milk. This version I am presenting is with sour cream, micro-greens or usual salad greens and pomegranate seeds.
Step-by-Step Easy & Quick Recipe –

All-purpose flour – 2 cups
Buck wheat flour + plain flour –1 ½ cup + ½ cup
Eggs – 2 (beaten)
Milk – 1 cup
Heavy cream – 1 cup
Yeast – ½ teaspoon (quick yeast)
Salt – one pinch
Sugar – 1 teaspoon
Oil – 2 teaspoon + for shallow frying
Pomegranate seeds – ½ cup
Sour cream folded with whip cream – 1 cup
Salad greens or Micro-greens – 1 cup
- In a large mixing bowl add all-purpose flour, eggs, milk, cream, yeast, sugar & salt and whisk & mix well to form a smooth batter. Let it sit covered for 1 hour, the batter will rise a bit.
- Now first heat a pan and grease it with oil, then pour the batter with a medium size ladle and cook on low or medium heat, once cooked and browned from bottom side, flip them with spatula gently. Let the other side cook and get golden brown too. In the same manner cook all the blini’s.
- Make the whip cream ready and then gently mix and fold with the sour cream.
- Now take a serving plate, place Blini in the center and top with a blob or layer of sour-whip cream mix. Dress up pomegranate seeds & micro-greens OR if you are using usual salad greens, then first plate the greens, then the blini and top with sour cream, pomegranate seeds & few roughly chopped greens again. Add a teaspoon of any berry jam of choice on the side.
Note: Rich, delicious Russian Blini is ready to be served, goes very well with sour cream with jams. Enjoy!
