Mitternachtsuppe or the “Midnight Soup” is a dish which was in earlier days served to the people during New year parties halfway during the all-night balls to quench their hunger with proteins, carbs & some fat to counter the alcohol they would consume while partying but now days this dish is seen commonly every where and usually made with leftovers in the fridge. It makes a delicious soupy meal.
This recipe is made with sausage, bacon & chicken (or beef or turkey) cooked with tomatoes, onion & garlic in chicken stock. served with a spoonful of yoghurt or creme fraiche. Yummy!
Step-by-Step Easy & Quick Recipe –

Ingredients:
Tomatoes – 2 ½ cups
Onions – 2 large (chopped)
Garlic cloves – 2-3
White beans or cannellini beans – 1 ½ cups
Kidney beans – 2 ½ cups
Yoghurt or crème fraiche – 200 ml (whisked)
Sausage mild spicy – 1-2 (chopped)
Bacon – 100 grams (chopped)
Chicken – 400 grams (original soup is done with beef & turkey also can be used per choice)
Chicken stock – 750 ml
Salt per taste
Red chili powder per choice
Hot paprika per choice
Hot chili flakes per choice
Tabasco sauce per taste or a dash
Worcestershire sauce per taste or a dash
Instructions:
- In a heavy bottomed large saucepan or a soup pot add bacon and cook till the fat runs and then add chopped onions and sausages, sauté for 2-3 minutes and add garlic and sauté again till onions and garlic starts to brown lightly.
- Now add the chicken (or turkey or beef) and sauté till it starts to change color. Now add the salt, chili powder, paprika, chili flakes and sauces per taste and sauté for another 2-3 minutes.
- Now add the chicken stock (or beef stock per choice) and bring it to boil on high heat, after that cover and simmer on low heat for about an hour.
- Transfer to serving bowls with soup ladle and stir in a spoonful of yoghurt or cream fraiche. Serve hot.
Note: Serve the hot spicy soup with your choice of breads. Enjoy!
