Whole-wheat pita bread – 6
Plum tomato – 2 (chopped)
Mushrooms – 4 (sliced)
Spinach – 1 bunch (rinsed properly & chopped)
Sun dried tomato pesto – 150 grams
Feta cheese – ½ cup (crumbled)
Parmesan cheese – 2 tablespoons (grated)
Ground black pepper
Olive oil – 3 tablespoons
- Preheat oven to 175°(350°F).
- Nicely spread the pita breads on one side with tomato pesto and top up with plum chopped tomatoes, mushrooms, spinach, feta cheese and Parmesan cheese. Drizzle olive oil and season with ground black pepper.
- Bake for about 10-12 minutes in the pre heated oven till the pita crusts or the bottom side is crisp. Slice them into quarters. Serve hot.
