Basic polenta is made with corn meal boiled and thickened to the extent of becoming solidified porridge. It can then be baked, fried or grilled per choice. It can be served as a great side dish with meats, chicken or veggies per choice.

Yellow cornmeal – 1 ¾ cup
Salt – 2 teaspoon
Butter – 3 tablespoons (unsalted)
Water – 6 cups
- In a large saucepan add water and bring it boil. Add salt and then slowly add cornmeal. Reduce the heat and slowly stir till the mixture thickens and the cornmeal is cooked and tender.
- Add butter and stir gently till it melts.
