Simple Vegan Tortellini Pasta Salad

Italian Tortellini pasta salad, well it sounds yummy and when you cook it n try it then you will love it even more as its super simple and easy to cook and incredibly delicious to eat.

This pasta dish is made by combining boiled spinach & ricotta cheese tortellini pasta with cherry tomato, boiled asparagus & black olive dressed with olive oil and seasoned with salt & fresh ground black pepper, well it is surely mouth watering simple recipe, so just go for it!

Spinach & ricotta tortellini pasta – 315 grams (12 ounce)

Cherry Tomato – 2 cups (halved)

Asparagus – 1 bunch (fresh, trimmed and cut into 1-inch pieces)

Black olives – 100 grams (pitted, halved)

Basil per taste (shredded)

Olive oil – ¼ cup (or to taste)

Salt per taste

Ground black pepper per taste



  • In a large pot boil asparagus with salt for 2-3 minutes till tender and then immediately drain and shock in cold water. Keep aside.
  • In a large saucepan boil water and add salt and tortellini pasta and cook till al-Dente. Drain shock in cold water. Keep aside.
  • Now in a large mixing bowl add and mix asparagus, tortellini, black olives and basil. Drizzle generously with olive oil and season with salt & freshly ground black pepper. Stir to coat well.
