South Indian Vegetable Stew – Veggie Kurma

It’s a vegetable stew from South India and generally goes very well with Aapam, roti, idiyappam or parotta’s or simple ghee rice. It is very easy to cook and very delicious to eat.

It is made with vegetable cooked in coconut milk curry with spices & green chilies. Try out this yummy dish.

French beans & carrots – mixed ¾ cup (boiled)

Potato – ½ cup (boiled, peeled & chopped)

Onions – ¼ cup (finely chopped)

Green chilies – ½ teaspoon (chopped)

Fresh green coriander – 1 tablespoon (finely chopped)

Coconut milk – 1 cup

Corn flour – 1 teaspoon

Salt per taste

Cardamom – 1

Clove – 1

Cinnamon – ½ inch piece

Oil – 1 tablespoon


  • In a mixing bowl, mix corn flour and coconut milk. Keep aside.
  • Heat oil in a pan and add clove, cardamom & cinnamon and sauté for ½ a minute, now add chopped onions & green chili and sauté for another minute on medium heat. Now add the coconut milk mixture along with vegetables, mix well and cook on medium heat for 2 minutes. Keep stirring in between. Garnish with fresh green coriander & serve hot.

Note: The hot vegetable stew can be served with aapam or parotta. Savor the taste of this delicious dish. Enjoy!
