French beans & carrots – mixed ¾ cup (boiled)
Potato – ½ cup (boiled, peeled & chopped)
Onions – ¼ cup (finely chopped)
Green chilies – ½ teaspoon (chopped)
Fresh green coriander – 1 tablespoon (finely chopped)
Coconut milk – 1 cup
Corn flour – 1 teaspoon
Salt per taste
Cardamom – 1
Clove – 1
Cinnamon – ½ inch piece
Oil – 1 tablespoon
- In a mixing bowl, mix corn flour and coconut milk. Keep aside.
- Heat oil in a pan and add clove, cardamom & cinnamon and sauté for ½ a minute, now add chopped onions & green chili and sauté for another minute on medium heat. Now add the coconut milk mixture along with vegetables, mix well and cook on medium heat for 2 minutes. Keep stirring in between. Garnish with fresh green coriander & serve hot.
