Jalfrezi or Jhalfrezi is a very popular tomato based vegetarian dish made with lots of seasonal veggies. It is an amazing combo of veggies cooked with spices, this dish has its origins way back during the old times wherein people started using & cooking left over vegetables with onions & tomatoes & chilies. In fact it is quite well known all over Asia. It can be made with chicken & meat too. In the end some people like it topped with cream to enhance the taste.
I saw & then tried many versions of this dish but the one I really liked and cook quite often is a very simple low carb one. Here the fresh seasonal veggies are cooked with onions and tomato and chilies, I have added paneer & zucchini, every one liked in my family so wanted to share with my readers too.

French beans – 10-12 (cut into 2-inch pieces, boiled in salt water)
Green bell pepper – medium 1 (2-inch thick julienne pieces)
Yellow bell pepper – medium 1 (2-inch thick julienne pieces)
Red bell pepper – medium 1 (2-inch thick julienne pieces)
Zucchini – medium 1 (2-inch thick julienne pieces, lightly sautéed)
Carrot – large 1 (cut into 2-inch pieces thick julienned, half boiled)
Paneer (cottage cheese) – 450 grams (cut into 2-inch thick julienned pieces)
Onions – medium 2 (sliced- thick)
Green chili – 1 (chopped)
Ginger – 1 tablespoon (2-inch finely julienned pieces)
Tomato – medium 2 (chopped)
Baby corn – ¼ cup (quartered, boiled in salt water)
Fresh green coriander – 2 tablespoon (finely chopped)
Salt per taste
Dried red chili whole – 2 (broken into few pieces)
Red chili powder – 1 teaspoon
Cumin seeds – 1 teaspoon
Turmeric powder – ½ teaspoon
Garam masala – 1 teaspoon
Plain vinegar – 1 ½ tablespoon
Oil – 3 tablespoon
Sugar – ½ teaspoon (optional)
Cream – 2-3 tablespoon (optional)
- Heat oil in large pan or wok and add cumin seeds and dried whole chili, sauté and when cumin starts to splutter, add thick sliced onions and sauté for 30-40 seconds. Now further add French beans, carrots, all 3 color bell peppers, slightly sautéed zucchini, boiled baby corn and mix gently.
- Further now add chopped tomatoes & ginger strips, green chilis with salt, turmeric powder, red chili powder & sugar (optional), again mix gently with a light hand with spatula. Now add paneer (cottage cheese). Mix well again gently.
- Lastly add fresh green coriander & vinegar, mix well all together and cook for 2-3 minutes. Now add cream, mix well gently and serve hot immediately.
Note: Delicious Jalfrezi is ready, can be served with tandoori roti, chapatti, naan or rice or any of your choice of breads. Bon Apatite!
