Spanish-Valencia Paella

Paella is a traditional or rather the national dish of Spain. It is a rice dish, which has its origins in coastal Albufera lagoon in Valencia, east coats of Spain.

This authentic paella dish is made with rice, chorizo sausage, marinated chicken breast pieces & shrimps. Cooked with nice spices and then layered on a serving plate, enjoy!

Step-by-Step Easy & Quick Recipe –

Ingredients:

Chicken breast – 4 (boneless, skinless & cut into 2-inch pieces)

Rice – 1 cup

Onion – 1 (chopped)

Red bell pepper – 1 (coarsely chopped)

Peas -½ cup (frozen, thawed)

Lemon – 1 (zested)

Garlic cloves – 2 (minced)

Parsley – ¼ cup

Sausage (chorizo) – ½ pound (without casting & crumbled)

Shrimp – ½ pound (peeled & deveined)

Olive oil – 3 tablespoons

Chicken stock – 2 cups

Bay leaf – 1

Saffron threads – 5-6

Salt per taste

Ground black pepper

Red pepper flakes – ½ teaspoon (crushed)

Paprika – ½ tablespoon

Dried oregano – 1 teaspoon

Instructions:

  • In a mixing bowl, add 1-tablespoon olive oil, salt, pepper, paprika and oregano, mix well and add chicken pieces. Coat the chicken properly, cover and refrigerate.
  • Heat 1 tablespoon of olive oil in a large skillet or pan or paella pan and further add pepper flakes and rice. Stir and cook for 3 minutes for the rice to be coated well. Now add bay leaf, parsley, saffron threads and chicken stock. Bring it to a boil and then on medium heat simmer for about 20-25 minutes till rice is well cooked. When the rice is nearly done, add the thawed peas.
  • In a separate pan heat 1 tablespoon olive oil and add the coated & marinated chicken with onions, cook on medium heat for 5-6 minutes, now add bell pepper & sausages. Cook for another 5-6 minutes and then add shrimps, keep turning shrimps so they are well cooked on both sides and turn pink.
  • Transfer and spread the cooked rice on a serving platter and top it up with a layer of cooked chicken, sausages and shrimps.

Note: You can use Arborio (risotto) rice instead of long grain rice per choice. Delicious Paella is ready, serve and savor the taste of authentic Spanish Valencia Paella, Bon Apatite!
