Delicious pastry cream is a very easily doable at home dessert cream used for filling for cakes, papal cream cake, pastries using custard fillings, cream puffs, éclairs etc.
To make this super easy, super simple & incredible delicious pastry filling all we need to do is cook together the milk, sugar, salt, cornstarch & egg yolks and then immediately keep in ice water bath to cool it and set. Yummy pastry cream, try it!
Step-by-Step Easy & Quick Recipe –

Milk – 2 cups
Eggs yolks – 6
Sugar – ¾ cup
Salt – 1 pinch
Vanilla extract – 1 teaspoon
Cornstarch – 5 tablespoons
- In a saucepan add milk, sugar, salt, vanilla extract, cornstarch & egg yolks, mix and bring it to a boil while constantly stirring it. Reduce the heat and keep stirring for another 1 minute.
- Take off heat and immediately put it into a ice-water bath. Incase lumps are formed then sieve them into a heat proof bowl kept in ice water bath to cool it.
- You can use hot pastry cream for polish cream cake or else you can cover the surface of the pastry cream with a plastic sheet and put some ice cubes on top to cool it. The bowl containing the hot pastry cream should be already in ice water bath.
- Once the cream cools down, cover and refrigerate up to 3 days and use as desired.
