Roasted-Marinated Bell peppers


The roasted marinated bell peppers can serve well as an antipasti or a side dish. It is delicious and easy to cook. Bell peppers are always a delight to cook, as they are colorful and tasty too. Normally we grill them or bake them or simple cook them but we thought of doing roasted marinated ones today.

Here the bell peppers are first roasted, peeled, sliced and then mixed with olive oil & balsamic or red wine vinegar and season with salt & pepper. Yummy!

Step-by-Step Easy & Quick Recipe –

Bell peppers – 3 large (yellow, red, orange or green per choice or mixed) – (cut into flat large pieces, seeds removed)

Spring onion – 1 (thinly sliced)

Basil – 5-6 (fresh leaves)

Parsley or Cilantro – 2 tablespoons (chopped)

Paprika – 1 teaspoon

Olive oil – ¼ cup

Red wine vinegar – 2 tablespoon (or 2 teaspoon balsamic vinegar)

Salt per taste

Ground black pepper


  • Place the bell pepper pieces on a baking sheet skin side up, broil till the skin blackens, take out and immediately transfer to a plastic bag or a container with tight lid to let them steam, peel or take the skin out and slice or dice them per choice.
  • Now in the mixing bowl mix all the bell peppers and spring onion, basil, cilantro, paprika, red wine vinegar or balsamic vinegar, salt, ground black pepper and olive oil.

Note: serve as antipasti with your choice of breads. You can also do this recipe by grilling on low heat till you get the black skin and then peeling off the skin & chopping them instead of roasting. Bon Apatite!
