Stuffed Dates with Pistachio & Crème Fraiche

Dates stuffed with almonds, well I have known them and loved them for a long time but once looking for crème fraiche recipes, I hit upon this dish and just by looking at the pic, I wanted to try them. I loved them and so wanted to share with my readers too.

Well this recipe is done with dates pitted & stuffed with almonds, topped with crème fraiche & chopped pistachios & lemon zest, well the outcome is that such small dates also taste incredible delicious. I saw this recipe at cooking.nytimes.com by Julia Moskin and picture, which made me try this recipe, was by Nathan Weber, well I loved it and I could not hold myself back from sharing it and am sure you will love it too, its very simple & easily doable but delicious, Try this!

Ingredients:

Dates – large size 12 (pitted & with a slit to insert almonds)

Almonds – 24 (blanched)

Crème Fraiche – 4 tablespoons

Pistachio – 1 tablespoon (chopped)

Lemon zest – 1 tablespoon (freshly grated) – optional

Instructions:

  • Rinse and then dry the date and make a slit on one side & remove the pit. Insert 2 almonds and try with fingers to close it back as much as possible.
  • Arrange the dates with slit side up on the serving platter and top up with a dollop of crème fraiche. Sprinkle lemon zest and garnish with chopped pistachios. Serve immediately.

Note: you can use cashew nuts or walnuts or pecans etc. instead of almonds per choice; serve as a delicious snack or finger food. Bon Apatite!
