Cucumber-Mint Sorbet

Here comes another one of the chilled dessert recipe, well you got it all correct, another sorbet. Summers and cucumbers go hand in hand and that makes it a perfect summer day recipe. Only thing you will wonder is that do cucumbers taste well as dessert too as one normally thinks of cucumbers for salad, well then you got to try this one out.

Here you can enjoy a sweet minty & cucumber taste when the frozen dessert will thaw & melt in your mouth, you will surely love this chilled sorbet. the chopped cucumbers need to be purred and mixed with sugar & mint syrup, seived and should be freezed. Delicious chilled dessert is ready. Try this!

Ingredients:

Cucumber – 300 grams (chopped)

Sugar – 150 grams

Water – 1 cup

Mint leaves – 3-4

Instructions:

  • In a saucepan add mint, sugar & water and cook till sugar dissolves. Cool it.
  • In a blender or food processor puree the cucumbers. Then add the sugar syrup and puree for another 1-2 minutes further until it all blends well and there are no lumps seen, now strain it with a sieve.
  • Freeze it and keep stirring it strongly from time to time, before serving keep it outside for it to softens a bit and becomes nicely scoop able to serve.
