Giambotta (or Ciambotta) is an Southern Italian stew dish primarily made with veggies but it can also have ingredients like fish & meat in it along with veggies. It can be served as a side dish or even as main sometimes. Generally made with eggplants, red bell pepper, herbs, onion & potatoes, zucchini, green beans etc., some people like with different beans too added with veggies.
This east doable comfort food can be made in few easy steps, just chop veggies as per choice or as mentioned below and cook in olive oil with tomato sauce & water, season with salt & pepper & oregano let it simmer on low heat and till the veggies are well cooked & boom its ready. Try this!

Eggplant – 1 large (cut into 1-inch pieces)
Bell peppers – 4 (seeded & cut into ¾ inch pieces – preferably Red bell pepper)
Zucchini – 1 (halved lengthwise & then cut into ¼ inch pieces)
Potato – 1 (peeled, chopped)
Carrots – 1 (peeled, halved lengthwise & then cut into ¼ inch pieces)
Green Beans – 8-10 pieces (cut into 2-inch pieces)
Tomato – 1 large (peeled, seeded & chopped)
Onions – medium 2 (finely chopped)
Garlic – 2 cloves (finely chopped)
Basil – 10 leaves (finely chopped)
Parsley – ¼ cup (finely chopped)
Black olives – ¼ cup (pitted, roughly chopped)
Extra virgin olive oil – 4 tablespoons
Salt per taste
Ground black pepper
Oregano – 1 pinch
Tomato sauce – 2-3 tablespoons
Water or vegetable stock – ½ cup
- In a large pan heat olive oil and garlic & onions, sauté for 3-4 minutes on high heat till they start becoming golden, then add the other veggies with water or vegetable stock & tomato sauce. Season with salt & pepper and let it simmer & cook covered on low heat for 30-40 minutes till veggies are soft & tender.
- Then add the oregano & parsley and let cook for another 1-2 minutes, take off heat & transfer to the serving dish.
Note: Delicious vegetable stew is ready to be served. Can be served with your choice of breads, Bon Apatite!
