Today we present a dish for Salmon & Veggies lovers, a dish which is very delicious, healthy & gorgeous to look at, a dish that can arouse your appetite instantly.

Ingredients:

Salmon fillet
- 400 g = 14 oz.

Carrots –  50 g = 1.7 oz (you can mix the colors with orange, purple or yellow carrots; use regular size or mini)

Zucchini – 50 g = 1.7 oz (yellow or green, use regular size or mini)

Cashew Nuts – 100 g = 3.5 oz

Fresh & filtered water – to taste

Honey – to taste.

Extra Virgin Olive Oil – to taste. I use Greek Natural Home by Nature Extra Virgin Olive Oil.

Salt – to taste

Instructions:

  • To prepare the Cashew cream, soak the cashew nuts in about 1⁄2 l = 2 cups water for about 2 hours (you can leave them soaking overnight as well).
Drain the nuts and place them in a food processor. Start with about 100 ml = 1⁄2 cup water and add it gradually, depending on what consistency do you want to achieve, then season with salt. When ready put it on the fridge. (*You can store the Cashew cream in the refrigerator for max. 2-3 days. * )
  • Now prepare your vegetables. First wash the carrots and zucchini very well. If you’re using the mini vegetables, you can cut them lengthwise in halves or quarters. If you’re using regular size vegetables, you can use batonnet cut (little sticks) or even a bit longer sticks.
  • Portion the salmon fillet into 4 x 100 g (3,5 oz.) pieces and sprinkle with a dash of sea salt. Then grill it slowly on a pan. You can just pan sear it, and keep it juicy inside or prepare it well done.
  • To assemble the dish first spread the Cashew cream on the plate, place a piece of salmon right next to it and assemble the vegetables to your liking. Drizzle some olive oil on top of the zucchini and carrots, and you can drizzle a tiny bit of honey on top of them additionally.
