Celebrity Chef Anna Chiarini has shared such a beautiful dish with us today. She is a big promoter of healthy, nutritious food and you can enjoy her dishes through her upcoming book “I Eat Healthy”. Here she has worked her magic of creating a Spring effect on the plate by combining fish, king of fruits Mango, greens & herbs. You can either plate it as per your own liking and artistry or simply follow the picture where Chef Anna had done the plating exhibiting her culinary expressions of the moment. Step-by-Step Easy & Quick Recipe –

Salmon – 400g = 14 oz. (or other tartare suitable fish, like tuna)
Mango – 100g = 3.5 oz. (brunoise, chopped)
Coriander – 1 small bunch (fresh; chopped finely)
Mix of fresh salad leaves – 100g = 3.5 oz. (different varieties)
Yellow zucchini – ½ (small, thinly sliced lengthwise)
Green zucchini – ½ (small, thinly sliced lengthwise)
Carrot – ½ (batonnet)
1 Small handful Blueberries, Blackberries or Raspberries
Lemons (juice) – 2
Extra Virgin Olive Oil – 30 ml = 2 tbsp. + to taste. My favorite is Home by Nature Extra Virgin Olive Oil (from Greece)
Salt – to taste
Edible flowers to garnish (if available)
- To prepare your tartare, dice finely the salmon. In a bowl first emulsify the lemon juice and 30 ml olive oil, season with salt. Now add the salmon and add the chopped mango and fresh coriander, mix evenly. Set aside in the refrigerator for about 30 min.
- To prepare your Garden: wash the salad leaves, vegetables and fruits very well. Cut the vegetables as indicated in the ingredients. *You can use of course other fruit and vegetable selection for the Garden, be creative.
- To assemble the dish, place the salmon tartare in the middle using a stainless steel round form. Then assemble the Garden around the tartare using your salad leaves, zucchini shaves, carrots and forest fruits. Drizzle with some olive oil and season with salt. When about to serve, remove the steel round form from the tartare.
